Last week I provided a recipe for brewing coffee. Now we need some cake to go with it. Here is an old recipe from my mother-in-law.

Orange Crunch Cake

Topping

2/3 cup sifted cake flour
1/3 cup sugar
1 tablespoon grated orange rind
3 tablespoons margarine, melted

Cake

½ cup margarine
1 cup sugar
2 eggs
1 tablespoon grated orange rind
1 tablespoon grated lemon rind
2 ¼ cups sifted cake flour
2 teaspoon baking powder
1 teaspoon salt
1 cup milk

Prepare topping first. Combine sifted flour, sugar and grated orange rind. Stir in melted margarine, mixing until fine crumbs form. Set aside while preparing cake.

Grease 9”x9”x2” cake pan. Add some flour, shake around pan, and shake out excess.. Sift together cake flour, baking power, and salt. Blend margarine and sugar in mixing bowl. Add eggs one at a time blending until smooth. Add orange and lemon rinds. Stir in sifted dry ingredients alternating with milk beginning and ending with flour – mix until smooth after each addition. Pour into pan. Sprinkle with topping. Bake at 350 degrees (F) until cake tests done – about 45 minutes.


The best part about this recipe is if your wife makes it, it has no calories.

This one i can do.

Queen Cakes are what i used to make for my Dad when i was young.

6oz margarine
6oz castor sugar
3 eggs
8oz self-raising flour
2oz sultanans
A few drops of vanilla essence(i personally never used this)


Beat the margarine and sugar till light and creamy(usually after a row with my parents i could do this well)
add vanilla
beat in eggs
ans stir in flour and fruit.
cook in patty tins which have been greased and dusted with flour.
pre heat to 475 put the cakes in and immediately turn to 400.
Cook for approx 17 mins.

Hi both of you!

Oh dear!
I am on a very strict medically imposed diet and it doesn't look as if I should participate in this feature. However, if only I had a wife to make the calorie free cake Don!! I am wondering how I might be able to overcome this problem! My husband doesn't think he can help me.

This is a recipe for Welsh Cakes, best eaten when still warm.

Ingredients
8oz self raising flour
4oz butter
1 egg
handful of sultanas
milk, if needed
3oz caster sugar
extra butter for greasing

Method
1 Rub the fat into the sieved flour to make breadcrumbs. Add the sugar, sultanas and the egg. Mix to combine, then form a ball of dough, using a splash of milk if needed.
2 Roll out the dough until it is 1/4in thick and cut into rounds with a 3-4in flutted cutter.
3 You now need a bakestone or heavy iron griddle. Rub it with a little butter. Put on heat and wait until it heats up, place the Welsh cakes on the griddle, turning once. They need about 2-3 minutes each side. Each side needs to be caramel brown before turning.
4 Remove from griddle and dust with caster sugar while still warm.
5 Eat and enjoy.
